As the weather is getting warmer and the fun and exciting outings with your family, friends and loved ones may seem rather far away, we thought of sharing with you some very delicious and most importantly easy to make cocktails at home. Below you will find three recipes of alcoholic and non-alcoholic versions that any family member could enjoy. Do not worry, there is no fancy equipment needed, just pick your favourite flavour and follow the instructions or the video below! So, without further ado, let’s make some cocktails!
KIWI MOJITO (4 portions)
Ingredients
3 tablespoons sugar diluted in 80ml fresh lime juice
1.5 medium size kiwi (blended)
200ml cloudy apple juice
200ml soda
150ml rum (skip if making a mocktail)
Ice
Fresh mint
Tools
Blender or Food processor
Jug or a large Bowl
PREP:
For this cocktail you will need a jug or a bigger sized container (you can even make your drinks in a bowl) as you will be making 4 portions.
Firstly blend 1.5 medium size kiwi in a food processor – if you do not have one you can crush the kiwis using a fork or a muddler *
Squeeze fresh limes and add the sugar (we used white caster sugar) to the mixture – give it a stir until the sugar is dissolved.
*tip when you shop for kiwis make sure that they are not too hard and if you would like your kiwis a bit juicier, store them at room temperature, they will ripen and taste better
METHOD
- Pour lime-sugar mixture into your chosen container
- Add blended kiwis
- Pour cloudy apple juice
- Add a handful of ice
- Stir until well mixed
- Pour soda (you can also use sparkling water for this)
- Add 12-15 fresh mint leaves
- Pour the rum (skip this step if you are making a non-alcoholic version)
- Give it another quick stir
- Divide the drink between 4 glasses
- Garnish with mint sprigs and kiwi slices (optional)

RASPBERRY & ELDERFLOWER MULE
Since this drink is best served shaken, we chose to use a glass jar with a lid. If you do not have any jars available, takeaway cups or even a lunch box with a lid would do just fine!
Ingredients
1.5 Tbsp raspberry puree
1.5 Tbsp lime juice
1 Tbsp elderflower cordial
4 Tbsp vodkaTop up with ginger ale
Ice
Lime wedge for garnish (optional)
PREP
Blend strawberries in a food processor
METHOD
- Pour strawberry puree into the jar
- Add lime juice to the jar
- Pour the elderflower cordial
- Pour vodka to the jar (skip if making a mocktail)
- Fill ¾ of the jar with ice
- Close it with a lid and give it a good shake
- Top up with ginger ale
- Garnish with a lime wedge
ENJOY!
PEACH & THYME ICED TEA
Ingredients
1.5 tbsp lime juice
1.5 honey syrup *
3 tsp peach puree
60ml earl grey tea
40ml Gin
Top up with Soda
Fresh Thyme (optional)
PREP
*To make honey syrup, mix 2 parts honey with 1 part warm (not boiling) water
Blend peaches to get the peach puree
METHOD
- Add lime juice to your chosen glass
- Pour honey syrup
- Add peach puree
- Pour Earl Grey Tea
- Add gin (skip if making a mocktail)
- Give it a good stir with a spoon
- Add ice
- Top up with soda
- Give another gentle stir
- Garnish with fresh thyme and peach slices
