Using fresh figs can fill your cocktail with gorgeous flavours and give your drink a wonderful colour. What’s not to like here…
IngredientsÂ
45ml El Dorado 3yo Rum
5ml Absinthe
Half a fresh fig
20ml Lemon Juice
15ml Honey Syrup
Topped up with Lemon Tonic
Method
Add all the above ingredients except tonic to a shaker
Fill it with ice and give it a good shake
Fine strain into a tumbler glass filled with ice
Top up with Lemon Tonic
Garnish with quartered fig & thyme
